Bright and crunchy this broccoli salad will become an instant favorite and secret weapon to get everyone to eat their fruits and vegetables with a smile!
Ingredients for Salad:
6 cups of Broccoli florets (you can chop as small as you want or even give it a round or two in the food processor on the "chop" function".
½ red onion (diced or chopped in the food processor)
½ cup dried fruit (raisins, cranberries, or the like)
½ sunflower seeds
½ cup chopped nuts (pecans, walnuts, cashews, or peanuts)
1 apple chopped (again I utilized my food processor so everything was a similar size.
**I did not add meat to this dish but you could easily add bacon or chicken
Ingredients for Dressing
3 TB Dijon mustard
3-4 TB honey
3-4 TB olive oil
2 TB apple cider vinegar (you can sub white wine or champagne)
¼ TS red pepper flakes
Salt and pepper to taste
Thin with water if needed
Directions
Combine all chopped ingredients in a large bowl.
Use a food processor to blend all ingredients for dressing or in a jar and shake to combine.
Pour over salad and stir to combine.
Can be served immediately but it also keeps well in the refrigerator for 2-3 days.
