INGREDIENTS
2 teaspoons active dry yeast
1 cup warm water (100 degrees F)
½ teaspoon sugar
35 grams whole-wheat flour (1/4 cup)
310 grams unbleached all-purposed flour (2 -2 1/2 cups)
1 teaspoon salt
2 tablespoons olive oil
Combine 1st three ingredients and let dissolve completely. Add 1 cup of flour. Mix well and let yeast activate (small bubbles will appear) about 10 minutes. Add the rest of the ingredients and knead
(I used dough hook) for 5-6 minutes until smooth. Brush inside of bowl with olive oil. Place dough in bowl cover and let rest for two hours. Roll into log. Cut dough into 8-10 pieces. Form balls. Cover and let rest 30 minutes. Roll balls out into 1/4 inch thick disk. Preheat cast-iron pan. Get very hot. Place disk on hot pan. About 3-4 minutes per side. Flip once. You will see the pita's rise as air forms inside. This is a good thing! Careful when flipping not to puncture the pita.
