3-Ingredient Strawberry Jam Small Batch

Last of the summer berries can't go to waste!Use this small batch 3-ingredient strawberry jam with no gelatin or preservatives.

Ingredients

16oz (1lbs) fresh strawberries

3/4 cups cane sugar

1-2 tablespoons lemon juice

*Splash of water

Directions

Cut off the tops of strawberries and dice into quarters. Place in a saucepan. Cover with 3/4 cup cane sugar. Turn the heat on Medium-High. Add lemon juice. Stir to combine. As sugar melts the juices from the strawberries should start to expel but you can use a potato mash, the back of a spoon, or a fork to macerate the strawberries down. You can add a splash of water if the strawberries are very dry - you don't want sugar to burn at this stage so ensure there is enough liquid in the pan to prevent burning. Continue to stir the mixture often as it comes to a soft boil. Continue to macerate strawberries until they break apart into bits and juice. Let simmer, stirring occasionally for 20-25 minutes. The mixture should be reduced but the jam will look quite runny at this point. As it cools it will reach the desired jam-like consistency.


Pour jam contents into a glass jar and let cool before placing in the refrigerator. If you place a hot container in the refrigerator immediately it can cause the glass to crack. This recipe should yield 3/4 cup jam.
